FRESH TRUFFLE STORAGE TIPS

Truffles must be kept cool and dry, in the refrigerator. Store them on an absorbent bed of clean, unscented (unbleached) paper towels and inside an airtight container (preferably glass) otherwise other items inside your refrigerator can become infused with the scent of truffles. You may find you need to nest one airtight container inside another, as the aroma can escape quite easily. Visually inspect your truffles daily for signs of decomposition. Carefully pat your truffles dry and replace the paper towels each day.

BLACK PERIGORD TRUFFLES

These are fragile and on average, have a shorter shelf life than white truffles. If you see any sort of moisture beading on the surface, sponginess, dark colored areas (like bruises on a banana) your truffle is at the end of its life cycle and must be used right away.

Smell the entire surface area of your truffle. If your nose detects any areas that smell bad, carefully cut the affected area away from the truffle until the offending part is gone.
